2 boneless skinless chicken breasts, cut into cubes

3-4 garlic cloves, minced

1 tsp fresh grated ginger

1/2 red onion, chopped

1/2 red bell pepper, diced

1/2 cup coconut milk

1/4 cup vegetable oil

2 tsp red curry paste

1/4 cup fresh lime juice

2 tsp fish sauce

2 tsp brown sugar

2 tsp chili flakes

2 scallions sliced

Instructions:

– Heat the oil in a large skillet over medium-high heat.

– Add the chicken, garlic, ginger and onion. Cook until the chicken is cooked through and the vegetables are softened, approximately 5-7 minutes.

– Add in the red bell pepper and cook for an additional 2-3 minutes.

– Reduce heat to medium and add the coconut milk, red curry paste, lime juice, fish sauce, brown sugar and chili flakes.

– Bring to a simmer and continue cooking for 5-7 minutes until the sauce has reduced and thickened.

– Serve over steamed white or brown rice with a garnish of chopped scallions.
