Recipe for Fried Rice

Fried Rice is a classic favourite, often served as a side dish or main meal as part of Chinese, Japanese and Southeast Asian cuisine. The great thing about Fried Rice is that it’s easy to make and can be adapted with whatever vegetables and other ingredients you have on hand. Here is a simple recipe to get you started.

Ingredients:

• 2 cups cooked, chilled white rice
• 2 tablespoons sesame oil, divided
• 1 onion, diced
• 2 large carrots, grated
• 2 cups mixed vegetables, such as peas, corn, bell peppers
• 2 tablespoons soy sauce
• 2 tablespoons finely chopped fresh ginger
• 1 garlic clove, minced
• 2-3 large eggs, lightly beaten
• Optional: ¼ cup green onions

Instructions:

1. Begin by heating 1 tablespoon sesame oil over a high heat in a large frying pan or wok.
2. Add the onion, carrots and mixed vegetables and stir-fry for 2-3 minutes.
3. Add the cooked rice and soy sauce and stir-fry for another 3-4 minutes.
4. Push everything to one side of the pan, before adding the remaining tablespoon of sesame oil to the empty side and then adding the ginger, garlic and eggs.
5. Quickly scramble the eggs before stirring it in with the other ingredients.
6. Continue to stir-fry for another 3-4 minutes, or until everything is evenly combined and heated through.
7. Serve garnished with green onion, if desired. Enjoy!
