-1/2 cup parmesan cheese
-2 cups swiss chard
-1 box lasagna noodles

Directions

1. Preheat oven to 350°F.

2. Heat a large skillet over medium-high heat. Add the bison and cook until no longer pink, about 7-10 minutes.

3. Add the onions and garlic to the pan and cook until softened, about 3 minutes.

4. Add the thyme, oregano, red wine, and chicken broth and simmer until liquid has reduced by half.

5. Turn off the heat and stir in the ricotta cheese, mozzarella cheese, and parmesan cheese until combined.

6. In a separate pot, blanch the swiss chard for about 2 minutes. Drain and set aside.

7. To assemble the lasagna, spread a layer of the bison mixture in the bottom of a 9×13 inch baking dish.

8. Top with a layer of lasagna noodles.

9. Top with a layer of crushed tomatoes.

10. Top with a layer of swiss chard.

11. Repeat these layers until the baking dish is full.

12. Top with a final layer of bison mixture and sprinkle with mozzarella cheese.

13. Bake for 30-40 minutes until the top is golden brown and bubbly.

14. Let cool for 10 minutes before slicing and serving.
