Pork mince and egg noodles tossed in a sticky hoisin and sweet chilli sauce with cabbage and carrot.

- 300g Dried egg noodles
- 400g Pork mince
- 1 tbsp Vegetable oil
- 2 cloves Garlic, finely chopped
- 1 tbsp Fresh ginger, grated
- 1 Carrot, coarsely grated
- 2 cups Cabbage, shredded
- 3 tbsp Hoisin sauce
- 2 tbsp Sweet chilli sauce
- 1 tbsp Soy sauce
- 3 Spring onions, sliced
You’ll need: Large frying pan or wok, Saucepan
Method
Cook the noodles to the packet instructions. Drain, keeping ¼ cup of the cooking water.
Heat the oil in a large frying pan or wok over high heat. Cook the pork for 5–6 minutes, breaking it up, until browned with no pink left.
Add the garlic, ginger, carrot and cabbage and stir-fry for 2 minutes.
Add the hoisin, sweet chilli, soy and reserved water and bubble for 1 minute. Add the noodles and toss until sticky and hot. Top with spring onion.
Storage
Fridge up to 2 days. Reheat until piping hot all the way through.
