Ingredients
- 4 Boneless pork loin chops, about 180g each, 2cm thick
- 1 tbsp Olive oil
- 1 tsp Smoked paprika
- 2 cloves Garlic, finely chopped
- 30g Butter
- 2 tsp Dijon mustard
- 120ml Chicken stock, ½ cup
- Salt and black pepper
You’ll need: Large frying pan
Method
Pat the chops dry and season both sides with the paprika, salt and pepper.
Heat the oil in a large frying pan over medium-high heat. Cook the chops for 4–5 minutes per side until golden and cooked through (63°C in the thickest part if you have a thermometer, and the juices run clear). Move to a plate and rest for 3 minutes.
Reduce the heat to medium. Melt the butter, add the garlic for 30 seconds, then stir in the stock and mustard. Simmer for 2–3 minutes until slightly reduced.
Return the chops and any resting juices to the pan and spoon the sauce over.
Storage
Fridge up to 2 days. Reheat until piping hot all the way through. Reheat gently so the chops stay tender.
