Easy Baked Salmon
Lemon and herb salmon baked on one tray with broccolini.

Ingredients
- 4 (about 150–180g each) Salmon fillets, skin on or off
- 2 bunches Broccolini, trimmed
- 2 tbsp Olive oil
- 2 cloves Garlic, finely chopped
- 1 Lemon, half sliced, half juiced
- 2 tbsp Dill or parsley, chopped
- Salt and black pepper
You’ll need: Large baking tray, Baking paper
Method
Heat the oven to 200°C (180°C fan). Line a large tray with baking paper.
Toss the broccolini on the tray with half the oil, a pinch of salt and pepper. Push to the sides and bake for 5 minutes.
Meanwhile, mix the remaining oil, garlic and lemon juice. Pat the salmon dry, season, and rub with the mixture.
Place the salmon in the middle of the tray and top with the lemon slices. Bake for 10–12 minutes, depending on thickness, until opaque and it flakes easily with a fork.
Scatter with the herbs and serve straight from the tray.
Storage
Fridge up to 2 days in a sealed container. Reheat gently until piping hot, or eat cold in salads. Not suitable for freezing once cooked.
