Ingredients
- 4 (about 150g each) Firm white fish fillets, barramundi, basa, snapper or hoki
- 3 tbsp Mayonnaise
- 1 tbsp Dijon mustard
- 1 cup (60g) Panko breadcrumbs
- 30g Parmesan, finely grated
- 1 tsp Smoked paprika
- 1 tbsp Olive oil
- 1 Lemon, cut into wedges
- Salt and black pepper
You’ll need: Baking tray, Baking paper
Method
Heat the oven to 220°C (200°C fan). Line a tray with baking paper.
Mix the panko, parmesan, paprika and oil in a shallow dish. In another dish, mix the mayonnaise and mustard.
Pat the fish dry and season lightly. Spread the mayonnaise mixture over the top and sides of each fillet, then press into the crumbs to coat.
Place on the tray and bake for 12–15 minutes, depending on thickness, until the crust is golden and the fish is opaque and flakes easily.
Serve with lemon wedges.
Storage
Best eaten fresh as the crust softens. Fridge up to 1 day; reheat in a hot oven until piping hot all the way through.
