Ingredients
- 2 (about 150g each) White fish fillets, such as barramundi, basa or hoki, about 2cm thick
- 1/4 cup (35g) Plain flour
- 1 Egg, beaten
- 1 cup (60g) Panko breadcrumbs
- 1/2 tsp Salt
- 1 light spray Olive oil spray, or brush with 1 tbsp oil
- 1/2 Lemon, cut into wedges

Method
Pat the fish dry and season with the salt. Put the flour, egg and panko in three shallow dishes.
Coat each fillet in flour, then egg, then press firmly into the panko.
Heat the air fryer to 200°C. Spray both sides of the fish with oil, or brush lightly, and place in the basket without touching.
Cook for 10–12 minutes, turning gently halfway, until the crumbs are golden. Thicker fillets need the longer time; thin ones may be ready sooner.
Check the fish is cooked: it should be opaque all the way through and flake easily with a fork at the thickest part. Serve with lemon.
Storage
Fridge up to 1 day. Reheat until piping hot in the air fryer at 180°C for 4–5 minutes.
