Pork Fried Rice

Ingredients
- 4 cups Cooked cold rice, from about 1½ cups raw
- 300g Pork loin steak, finely diced
- 2 tbsp Vegetable oil
- 2 Eggs, beaten
- 2 cloves Garlic, finely chopped
- 1 cup Frozen peas and diced carrot
- 4 Spring onions, sliced
- 2 tbsp Soy sauce
- 1 tbsp Oyster sauce
- ¼ tsp Black pepper
You’ll need: Large frying pan or wok
Method
Heat 1 tbsp oil in a large frying pan or wok over high heat. Cook the pork for 3–4 minutes, stirring, until browned and cooked through with no pink. Remove to a plate.
Add the remaining oil, pour in the eggs and scramble for 30 seconds. Add the garlic, peas and carrot and stir for 2 minutes.
Add the rice, breaking up clumps, and stir-fry for 3–4 minutes until hot. Return the pork, add the soy, oyster sauce, pepper and most of the spring onion and toss until steaming hot all the way through.
Serve topped with the remaining spring onion.
Storage
Cooked rice must be cooled quickly and refrigerated within 1 hour. Keeps up to 1 day. Reheat once, until piping hot all the way through.
