Easy Pork and Vegetable Rice Bowls

Seared pork slices over rice with crunchy cucumber, carrot and broccoli and a sesame-lime dressing.

Ingredients

  • 4 cups Cooked rice, from about 1½ cups raw
  • 3 Pork loin steaks, about 500g total
  • 1 tbsp Vegetable oil
  • 1 head Broccoli, cut into small florets
  • 2 Carrots, coarsely grated
  • 1 Cucumber, sliced
  • 2 tbsp Soy sauce
  • 2 tbsp Lime juice
  • 1 tsp Honey
  • 1 tsp Sesame oil
  • Salt and black pepper

You’ll need: Large frying pan, Saucepan

Method

  1. Cook the rice to the packet instructions. Whisk the soy, lime juice, honey and sesame oil in a small bowl.

  2. Season the pork with salt and pepper. Heat the oil in a large frying pan over medium-high heat and cook for 4–5 minutes per side until golden and cooked through (63°C in the thickest part if you have a thermometer). Rest for 5 minutes.

  3. Boil or steam the broccoli for 3 minutes, then drain.

  4. Slice the pork thinly. Divide the rice between bowls, top with the pork, broccoli, carrot and cucumber and drizzle with the dressing.

Storage

Keep cooked pork in the fridge up to 2 days and eat the dressed vegetables the same day. Cooked rice must be cooled quickly and refrigerated within 1 hour. Keeps up to 1 day. Reheat once, until piping hot all the way through.
