Easy Prawn Fried Rice

- 600g Cooked cold rice, about 250g uncooked rice, cooked and fully chilled
- 2 tbsp Vegetable oil
- 1 Onion, thinly sliced
- 3 cloves Garlic, finely chopped
- 2 Eggs, lightly beaten
- 300g Raw prawns, peeled and deveined, halved if large
- 1 large Tomato, cut into wedges
- 1 tbsp Soy sauce
- 1 tbsp Fish sauce
- 1 Lime, cut into wedges
- 1/4 cup Coriander, chopped
You’ll need: Large frying pan or wok
Method
Break up any clumps in the cold rice with your fingers.
Heat the oil in a large frying pan or wok over high heat. Stir-fry the onion and garlic for 1 minute.
Push to the side, add the eggs and scramble until just set. Add the prawns and cook for 2 minutes, turning, until pink.
Add the rice, tomato, soy sauce and fish sauce and stir-fry for 3–4 minutes until the rice is steaming hot all the way through.
Serve topped with coriander and a squeeze of lime.
Storage
Cool leftover rice quickly and refrigerate within 1 hour. Keeps up to 1 day in the fridge. Reheat once, until piping hot all the way through; reheated prawns can turn rubbery.
