Ingredients
- 2 tbsp Vegetable oil
- 3 Eggs, beaten
- 1 large Carrot, finely diced
- 4 Spring onions, sliced, white and green parts separated
- 2 cloves Garlic, finely chopped
- 450g Cooked rice, cold, from about 170g dry rice, cooled within an hour of cooking and chilled
- 100g Frozen peas
- 3 tbsp Soy sauce
- 1 tsp Sesame oil
You’ll need: Large frying pan or wok
Method
Break up any clumps in the cold rice with your fingers.
Heat 1 tbsp of the oil in a large frying pan or wok over medium-high heat. Add the eggs and scramble for 1 minute until just set. Tip onto a plate.
Add the remaining oil, the carrot and the white parts of the spring onions. Stir-fry for 3 minutes. Add the garlic and cook for 30 seconds.
Add the rice and peas and stir-fry for 4–5 minutes, until the rice is steaming hot all the way through.
Stir in the soy sauce, sesame oil and the eggs, breaking them up. Serve topped with the green spring onion.
Storage
Cool quickly and chill within 1 hour. Keep in the fridge and eat within 1 day. Reheat once, until piping hot all the way through.
