Easy Pork Schnitzel
Thin crumbed pork steaks, shallow-fried until golden and served with lemon.

- 4 Pork loin steaks, about 120g each
- ⅓ cup Plain flour
- 2 Eggs, beaten
- 1½ cups Breadcrumbs, panko or dried
- 120ml Vegetable oil, for shallow frying
- 1 Lemon, cut into wedges
- Salt and black pepper
You’ll need: Large frying pan, Rolling pin
Method
Place the steaks between sheets of baking paper and pound with a rolling pin to about 5–8mm thick. Season both sides.
Set up three shallow dishes: flour seasoned with salt and pepper, the eggs, and the breadcrumbs. Coat each steak in flour, then egg, then breadcrumbs, pressing the crumbs on.
Heat half the oil in a large frying pan over medium-high heat. Cook 2 schnitzels for 2–3 minutes per side until deep golden and cooked through with no pink. Drain on paper towel and repeat with the remaining oil and schnitzels. Take care with the hot oil.
Serve with lemon wedges and a green salad or chips.
Storage
Fridge up to 2 days. Reheat in a 200°C oven for about 10 minutes until piping hot all the way through.
