- 400g Pork loin steaks or tenderloin, cut into thin strips
- 2 tbsp Vegetable oil
- 1 Onion, cut into wedges
- 2 Capsicum, red and green, sliced
- 2 cloves Garlic, finely chopped
- 225g tin Tinned pineapple pieces, drained, keep ⅓ cup juice
- 3 tbsp Tomato sauce
- 2 tbsp White vinegar
- 1 tbsp Soy sauce
- 2 tsp Cornflour
- 4 cups Cooked rice, from about 1½ cups raw
You’ll need: Wok or large frying pan, Saucepan
Method
Cook the rice to the packet instructions. Whisk the pineapple juice, tomato sauce, vinegar, soy and cornflour in a small bowl.
Heat 1 tbsp oil in a wok or large frying pan over high heat. Stir-fry the pork for 3–4 minutes until browned and cooked through with no pink. Remove to a plate.
Add the remaining oil, onion and capsicum and stir-fry for 3–4 minutes until just tender. Add the garlic for 30 seconds.
Return the pork, add the pineapple, then stir the sauce and pour it in. Bubble for 1–2 minutes until thick and glossy. Serve over the rice.
Storage
Keep leftover pork stir-fry in the fridge up to 2 days. Cooked rice must be cooled quickly and refrigerated within 1 hour. Keeps up to 1 day. Reheat once, until piping hot all the way through.
