Honey Soy Chicken

Ingredients
- 2 large (about 500g) Chicken breasts, cut into 2.5cm chunks
- 3 tbsp Soy sauce
- 2 tbsp Honey
- 3 tbsp Water
- 1 tsp Cornflour
- 1 tbsp Vegetable oil
- 2 cloves Garlic, finely chopped
- 2cm piece Fresh ginger, grated
- 250g Long-grain rice, to serve
You’ll need: Large frying pan, Saucepan
Method
Cook the rice according to the packet instructions.
Meanwhile, stir the soy sauce, honey, water and cornflour together in a small bowl until smooth.
Heat the oil in a large frying pan over medium-high heat. Cook the chicken for 6–7 minutes, turning, until golden.
Add the garlic and ginger and cook for 30 seconds. Pour in the sauce and simmer for 2–3 minutes, stirring, until thick and sticky and the chicken is coated.
Cut a larger piece in half to check it is white all the way through with no pink. Serve over the rice.
Storage
Fridge up to 2 days. Cool leftover rice quickly and eat within 1 day. Reheat everything until piping hot.
