Creamy Garlic Chicken

Ingredients
- 2 large (about 500g) Chicken breasts, each sliced in half horizontally into 2 thin pieces
- 1 tbsp Olive oil
- 3 cloves Garlic, finely chopped
- 150ml Chicken stock
- 150ml Double cream
- 30g Parmesan, finely grated
- 1 tsp Mixed dried herbs
- Salt and black pepper
You’ll need: Large frying pan
Method
Season the chicken with salt and pepper.
Heat the oil in a large frying pan over medium-high heat. Cook the chicken for 5–6 minutes on each side, until golden and cooked through with no pink inside. Move it to a plate.
Turn the heat to medium. Add the garlic and herbs and cook for 30 seconds, then pour in the stock and scrape up any browned bits from the pan.
Stir in the cream and simmer for 3–4 minutes, until slightly thickened. Stir in the parmesan until melted.
Return the chicken and any juices to the pan and warm through for 1 minute. Taste, season and serve.
Storage
Fridge up to 2 days. Reheat gently until piping hot all the way through.
