Ingredients
- 2 large (about 500g) Chicken breasts, each sliced in half horizontally into 2 thin pieces
- 1 tbsp Olive oil
- 40g Butter
- 4 cloves Garlic, finely chopped
- 1 tbsp Lemon juice
- small handful Fresh parsley, chopped
- Salt and black pepper
You’ll need: Large frying pan
Method
Pat the chicken dry and season both sides with salt and pepper.
Heat the oil in a large frying pan over medium-high heat. Cook the chicken for 5–6 minutes on each side, until golden and cooked through with no pink inside. Move it to a plate.
Lower the heat to medium. Add the butter and garlic to the pan and cook for 30 seconds, stirring, until fragrant but not browned.
Stir in the lemon juice, return the chicken to the pan and spoon the sauce over it. Scatter with parsley and serve.
Storage
Fridge up to 2 days. Reheat until piping hot all the way through.
