Chicken Pesto Pasta

Ingredients
- 300g Pasta, any shape
- 2 (about 350g) Chicken breasts, sliced into thin strips
- 1 tbsp Olive oil
- 4 tbsp Green pesto, from a jar
- 30g Parmesan, grated
You’ll need: Large saucepan, Large frying pan
Method
Cook the pasta in a large pan of boiling water according to the packet instructions. Before draining, save a mug of the pasta water.
Meanwhile, heat the oil in a large frying pan over medium-high heat. Cook the chicken for 6–7 minutes, stirring, until golden and cooked through with no pink inside.
Turn off the heat. Add the drained pasta and pesto to the pan and toss together, adding a splash of pasta water to loosen the sauce.
Serve topped with the parmesan.
Storage
Fridge up to 2 days. Reheat until piping hot all the way through.
