Honey Garlic Pork

- 500g Pork tenderloin, sliced into 2cm rounds
- 250g Green beans, trimmed
- 1 tbsp Vegetable oil
- 20g Butter
- 4 cloves Garlic, finely chopped
- 3 tbsp Honey
- 1 tbsp Soy sauce
- 1 tbsp Lemon juice
- 3 tbsp Water
- Salt and black pepper
You’ll need: Large frying pan, Small saucepan
Method
Press each pork slice flat with your palm to about 1.5cm thick and season with salt and pepper. Boil the beans in salted water for 4 minutes, then drain.
Heat the oil in a large frying pan over medium-high heat. Cook the pork for 2–3 minutes per side until golden and cooked through (no pink in the centre, or 63°C with a thermometer). Move to a plate.
Reduce the heat to medium. Melt the butter, add the garlic for 30 seconds, then add the honey, soy, lemon juice and water. Simmer for 2 minutes until syrupy.
Return the pork and any juices to the pan and turn for 1 minute to coat and heat through. Serve with the beans and spoon over the glaze.
Storage
Fridge up to 2 days. Reheat until piping hot all the way through.
