Easy Pork Tacos

- 500g Pork mince
- 1 tbsp Olive oil
- 2 cloves Garlic, finely chopped
- 2 tsp Ground cumin
- 2 tsp Smoked paprika
- 2 Limes
- 1 Red onion, thinly sliced
- 2 cups Cabbage, finely shredded
- 8 Small soft tortillas
- to serve Sour cream or avocado
- 1 tsp Salt
You’ll need: Large frying pan
Method
Toss the red onion with the juice of 1 lime and a pinch of salt. Leave for 10 minutes while you cook the pork.
Heat the oil in a large frying pan over medium-high heat. Cook the pork for 6–8 minutes, breaking it up, until browned with no pink left. Add the garlic, cumin, paprika, 1 tsp salt and 2 tbsp water and cook for 2 minutes.
Toss the cabbage with the juice of ½ lime. Cut the remaining ½ lime into wedges.
Warm the tortillas to the packet instructions. Fill with the pork, cabbage and pickled onion and finish with sour cream or avocado and a lime wedge.
Storage
Keep leftover pork in the fridge up to 2 days. Reheat until piping hot all the way through. Store the onion and cabbage separately and fill tortillas just before eating.
