- 3 cups (450g) Self-raising flour, plus extra for dusting
- 1 tbsp Caster sugar
- 60g Butter, cold, cut into cubes
- 1 cup (250ml) Milk, plus 1 tbsp for brushing
You’ll need: Baking tray, 6cm round cutter
Method
Preheat the oven to 220°C (200°C fan). Put a baking tray in the oven to heat.
Mix the flour and sugar in a large bowl. Rub in the butter with your fingertips until it looks like fine crumbs.
Add 1 cup of milk and mix with a butter knife to a soft, slightly sticky dough, adding a splash more milk if it looks dry. Don't overmix.
Turn onto a floured bench and pat out gently to about 3cm thick. Cut out rounds with a floured 6cm cutter, pressing straight down without twisting. Re-pat the scraps once to cut more.
Place the scones close together on the hot tray, brush the tops with the extra milk and bake for 12–14 minutes, until risen and golden.
Cool for 5 minutes. Serve warm with jam and whipped cream.
Storage
Best eaten the day they're made. Freeze cooled scones up to 3 months and warm in the oven. Any leftover cream stays in the fridge.
