- 1 cup (260g) Smooth peanut butter
- 1 cup (200g) Brown sugar, firmly packed
- 1 Egg
You’ll need: 2 large baking trays, Baking paper, Fork
Method
Preheat the oven to 180°C (160°C fan). Line 2 large baking trays with baking paper.
Mix the peanut butter, sugar and egg in a bowl until a thick dough forms.
Roll tablespoons of dough into balls (about 16) and place on the trays 5cm apart. Press each with a fork in a criss-cross pattern.
Bake for 10–12 minutes, swapping the trays halfway, until puffed and lightly golden at the edges; they will be soft.
Cool on the trays for 5 minutes, until firm enough to lift, then move to a wire rack. Don't eat the raw dough, as it contains raw egg.
Storage
Keeps in an airtight container at room temperature up to 5 days.
