- 200g Plain flour
- 2 tsp Baking powder
- 2 tbsp Caster sugar
- 1 pinch Salt
- 300ml Milk
- 1 Egg
- 2 tbsp Butter, melted, plus extra for the pan
You’ll need: Non-stick frying pan, Mixing bowl, Whisk
Method
Mix the flour, baking powder, sugar and salt in a large bowl.
Whisk the milk, egg and melted butter together, pour into the dry ingredients and stir until just combined. A few small lumps are fine. Rest for 5 minutes.
Heat a non-stick frying pan over medium heat and rub with a little butter. Pour in about ¼ cup (60 ml) batter for each pancake, leaving space between them.
Cook for about 2 minutes until bubbles appear on top and the edges look set, then flip and cook 1–2 minutes until golden. Keep warm and repeat, buttering the pan as needed. Makes about 8.
Storage
Keep cooked pancakes in the fridge up to 2 days, or freeze up to 1 month with baking paper between them. Reheat in a toaster or microwave until hot all the way through.
