Easy Gravy
A smooth everyday gravy made from butter, onion, flour and stock, with no roast drippings needed.

Ingredients
- 30g Butter
- 1 small Onion, finely diced
- 3 tbsp Plain flour
- 500ml Beef stock, hot (chicken or vegetable also work)
- 1 tbsp Soy sauce
- Black pepper, to taste
You’ll need: Saucepan, Whisk
Method
Melt the butter in a saucepan over medium heat. Add the onion and cook for 4 minutes, until soft and lightly golden.
Stir in the flour and cook for 1 minute, stirring, until it forms a paste and smells toasty.
Add the stock a splash at a time, whisking well after each addition so there are no lumps.
Stir in the soy sauce, bring to a simmer and cook for 6–8 minutes, until thick enough to coat the back of a spoon.
Season with pepper and taste for salt. Pour through a sieve for a smooth gravy if you like.
Storage
Fridge up to 3 days. It thickens when cold, so reheat with a splash of water until piping hot.
