Ingredients
- 8 slices Bread, thick-cut, a day or two old
- 3 Eggs
- ⅔ cup (150 ml) Milk
- 1 tbsp Caster sugar
- ½ tsp Ground cinnamon
- 2 tbsp Butter, for frying, plus more as needed
- Maple syrup, to serve
You’ll need: Large frying pan, Shallow dish
Method
Whisk the eggs, milk, sugar and cinnamon in a wide shallow dish until smooth.
Dip each slice in the mixture for about 10 seconds per side, so it soaks in but doesn't fall apart. Let the excess drip off.
Melt a little butter in a large frying pan over medium heat. Fry 2–3 slices at a time for 2–3 minutes per side until golden and cooked through, with no wet egg in the middle.
Add more butter between batches. Serve hot with maple syrup.
Storage
Best eaten fresh. Refrigerate leftovers within 2 hours and eat within 2 days. Reheat in a toaster or pan until piping hot all the way through.
