Easy Egg and Bacon Rolls

Ingredients
- 8 Bacon rashers
- 4 Eggs
- 30g Butter, softened, plus a little for the pan
- 4 Soft bread rolls, split
- Tomato sauce, optional, to serve
You’ll need: Large frying pan
Method
Cook the bacon in a large frying pan over medium-high heat for 6–8 minutes, turning once, until crisp. Move to a plate and keep warm.
Pour off most of the bacon fat. Melt a little butter in the pan over medium heat and crack in the eggs. Cook for 3–4 minutes, turning once, until the whites are fully set and the yolks are firm.
Butter the rolls. Fill each with 2 rashers of bacon and a fried egg, add tomato sauce if you like, and serve hot.
Storage
Best eaten straight away.
