Ingredients
- 1 x 420g tin Corn kernels, drained well
- 1 cup Self-raising flour
- 2 Eggs
- 1/2 cup Milk
- 3 Spring onions, finely sliced
- 1/4 cup Vegetable oil, for frying
- Salt and black pepper
You’ll need: Large frying pan, Mixing bowl
Method
Whisk the flour, eggs, milk, salt and pepper in a bowl until just smooth. Stir in the corn and spring onions.
Heat 1 tbsp oil in a large frying pan over medium heat. Spoon in 1/4 cup of batter per fritter, 3–4 at a time, and flatten slightly.
Cook for 2–3 minutes each side until golden and cooked through in the middle. Never leave hot oil unattended.
Drain on paper towel and repeat with the remaining oil and batter, making about 12 fritters. Serve warm.
Storage
Cool within 2 hours. Keep in the fridge up to 2 days and reheat until piping hot all the way through.
