- 500g Button mushrooms, sliced
- 40g Butter
- 3 Garlic cloves, crushed
- 1 tbsp Lemon juice
- 2 tbsp Flat-leaf parsley, chopped
- 4 Thick bread slices, sourdough or wholemeal
- Salt and black pepper
You’ll need: Large frying pan
Method
Melt half the butter in a large frying pan over medium-high heat. Add the mushrooms in a single layer, cooking in two batches if needed so they brown rather than steam. Cook for 6–8 minutes, stirring now and then, until golden and the liquid has cooked off.
Add the remaining butter and the garlic and cook for 1 minute. Take off the heat, add the lemon juice, parsley, salt and pepper.
Toast the bread, top with the mushrooms and serve straight away.
Storage
Best eaten straight away. Leftover mushrooms keep covered in the fridge up to 1 day; reheat until piping hot.
