Easy Breakfast Fried Rice

Ingredients
- 3 cups Cooked cold rice, from about 1 cup raw
- 4 Bacon rashers, chopped
- 1 tbsp Vegetable oil
- 3 Eggs, beaten
- ½ cup Frozen peas
- 3 Spring onions, sliced
- 2 tbsp Soy sauce
You’ll need: Large frying pan or wok
Method
Heat the oil in a large frying pan or wok over medium-high heat. Add the bacon and cook for 4–5 minutes until crisp. Move it to one side of the pan.
Pour the eggs into the empty side and scramble for 1 minute until set, then mix in with the bacon.
Add the peas and rice, breaking up any clumps, and stir-fry for 3–4 minutes until piping hot.
Stir in the soy sauce and most of the spring onion. Serve topped with the remaining spring onion.
Storage
Cooked rice must be cooled quickly and refrigerated within 1 hour. Keeps up to 1 day. Reheat once, until piping hot all the way through.
