Ingredients
- 500g Beef mince
- 1 tbsp Olive oil
- 1 Onion, finely chopped
- 2 cloves Garlic, finely chopped
- 2 tbsp Taco seasoning, or 1 sachet
- 1 tbsp Tomato paste
- 8 Taco shells
- 2 cups Lettuce, shredded
- 2 Tomatoes, diced
- 100g Cheddar, grated
- to serve Sour cream
You’ll need: Large frying pan
Method
Heat the oil in a large frying pan over medium-high heat. Cook the onion for 3 minutes, adding the garlic for the last minute.
Add the mince and cook for 6–8 minutes, breaking it up, until browned with no pink left.
Stir in the taco seasoning, tomato paste and 100ml water. Simmer for 3–4 minutes until thick and saucy.
Warm the taco shells to the packet instructions. Fill with the beef and top with lettuce, tomato, cheese and sour cream.
Storage
Keep leftover beef in the fridge up to 2 days. Reheat until piping hot all the way through. Fill shells just before eating.
