- 400g Beef rump or flank steak, thinly sliced
- 1 tbsp Cornflour, for the beef
- 1 large head Broccoli, cut into small florets
- 2 tbsp Vegetable oil
- 2 cloves Garlic, finely chopped
- 1 tbsp Fresh ginger, grated
- 3 tbsp Soy sauce
- 2 tbsp Oyster sauce
- 1 tbsp Brown sugar
- 2 tsp Cornflour, for the sauce
- 100ml Water
- 300g Long-grain rice
You’ll need: Large frying pan or wok, Saucepan
Method
Cook the rice according to the packet instructions. Toss the beef with 1 tbsp cornflour. Whisk the soy sauce, oyster sauce, sugar, 2 tsp cornflour and water in a jug.
Heat half the oil in a large frying pan or wok over high heat. Stir-fry the beef in two batches for 1–2 minutes until browned. Remove to a plate.
Add the remaining oil and the broccoli with 2 tbsp water. Cover and cook for 3 minutes until just tender. Add the garlic and ginger and stir for 30 seconds.
Return the beef to the pan, give the sauce a stir and pour it in. Cook for 1–2 minutes until glossy and thick and the beef is cooked through with no pink left. Serve with the rice.
Storage
Fridge up to 2 days. Reheat until piping hot all the way through.
