Beef and Vegetable Stir-Fry

- 400g Beef rump or sirloin steak, thinly sliced
- 300g Egg noodles
- 2 tbsp Vegetable oil
- 1 Carrot, thinly sliced
- 1 Red capsicum, sliced
- 1 small head Broccoli, cut into small florets
- 2 cloves Garlic, finely chopped
- 2 tsp Fresh ginger, grated
- 3 tbsp Soy sauce
- 1 tbsp Oyster sauce
- 1 tbsp Honey
You’ll need: Large frying pan or wok, Saucepan
Method
Cook the noodles according to the packet instructions, drain and set aside. Mix the soy sauce, oyster sauce, honey and 2 tbsp water in a small bowl.
Heat half the oil in a large frying pan or wok over high heat. Stir-fry the beef in two batches for 1–2 minutes until browned. Remove to a plate.
Add the remaining oil, carrot and broccoli and stir-fry for 3 minutes. Add the capsicum, garlic and ginger and cook for 2 minutes more until the vegetables are crisp-tender.
Return the beef with the noodles and sauce. Toss for 1–2 minutes until the beef is cooked through with no pink left and everything is hot.
Storage
Fridge up to 2 days. Reheat until piping hot all the way through.
