Beef Quesadillas

- 400g Beef mince
- 1 tbsp Olive oil, plus extra for the tortillas
- 1 Onion, finely chopped
- 1 Red capsicum, diced
- 1½ tbsp Taco seasoning
- 4 Large flour tortillas
- 200g Tasty cheese, grated
- to serve Sour cream
You’ll need: Large frying pan
Method
Heat 1 tbsp oil in a large frying pan over medium-high heat. Cook the onion and capsicum for 4 minutes.
Add the mince and cook for 6–8 minutes, breaking it up, until browned with no pink left. Stir in the taco seasoning and 80ml water and simmer for 2 minutes. Tip into a bowl and wipe out the pan.
Sprinkle cheese over half of each tortilla, add a quarter of the beef, then fold over.
Cook in the pan over medium heat with a little oil, 2 minutes each side, until golden and the cheese has melted. Do 1–2 at a time. Cut into wedges and serve with sour cream.
Storage
Fridge up to 2 days. Reheat in a hot pan or oven until piping hot all the way through.
