Easy Beef Nachos

- 400g Beef mince
- 1 tbsp Olive oil
- 1 Onion, finely chopped
- 2 tbsp Taco seasoning
- 250g Tomato salsa
- 250g Corn chips
- 200g Tasty cheese, grated
- to serve Sour cream
- 2 Spring onions, sliced
You’ll need: Large frying pan, Large baking tray
Method
Preheat the oven to 200°C (180°C fan). Heat the oil in a large frying pan over medium-high heat and cook the onion for 3 minutes.
Add the mince and cook for 6–8 minutes, breaking it up, until browned with no pink left. Stir in the taco seasoning, half the salsa and 60ml water and simmer for 2 minutes.
Spread half the corn chips over a large lined baking tray. Top with half the beef and half the cheese. Repeat with the remaining chips, beef and cheese.
Bake for 8–10 minutes until the cheese is melted and bubbling. Top with the remaining salsa, sour cream and spring onion and serve straight away.
Storage
Best eaten straight away. Keep leftover cooked beef separately in the fridge up to 2 days and reheat until piping hot all the way through.
