Easy Beef Burritos

- 500g Beef mince
- 1 tbsp Olive oil
- 1 Onion, finely chopped
- 2 cloves Garlic, finely chopped
- 2 tbsp Taco seasoning, or 1 sachet
- 400g can Kidney beans, drained and rinsed
- 250g Cooked rice, e.g. 1 microwave pouch
- 120g Tomato salsa
- 6 Large flour tortillas
- 120g Cheddar, grated
You’ll need: Large frying pan
Method
Heat the oil in a large frying pan over medium-high heat. Cook the onion for 3 minutes, adding the garlic for the last minute.
Add the mince and cook for 6–8 minutes, breaking it up, until browned with no pink left. Stir in the taco seasoning and 100ml water and simmer for 3 minutes.
Stir in the beans, rice and salsa and heat through until steaming hot, about 3 minutes.
Warm the tortillas to the packet instructions. Spoon the filling and cheese down the middle, fold in the sides and roll up tightly. Serve with extra salsa.
Storage
Wrap cooked burritos and refrigerate up to 2 days, or freeze up to 2 months. Reheat until piping hot all the way through.
