Air Fryer Sweet Potato Fries

- 600g Sweet potatoes, peeled, cut into 1cm sticks
- 1 tbsp Olive oil
- 1 tbsp Cornflour
- 1/2 tsp Smoked paprika
- 1/2 tsp Salt
You’ll need: Air fryer
Method
Toss the sweet potato sticks with the oil in a bowl, then sprinkle over the cornflour, paprika and salt and toss again until lightly coated.
Heat the air fryer to 200°C. Cook in 2 batches in a single thin layer. Crowded fries steam and go soft.
Cook for 14–18 minutes, shaking at about 8 minutes, until the edges are browned and the fries feel firm. Sweet potato browns faster than white potato because of its natural sugars, so start checking at 12 minutes.
Leave for 2 minutes before serving; they crisp slightly as they cool.
Storage
Best eaten fresh. Fridge up to 2 days; they will be softer, so re-crisp in the air fryer at 200°C for 3–4 minutes.
