Ingredients:

  • 115g Unsalted Butter Room temperature
  • 50g Brown Sugar
  • 50g White Sugar
  • 150g Ground Almonds
  • 2-3 tsp Ground Ginger
  • 2-3 Whole Crystallised Ginger
  • 1/4 tsp Nutmeg
  • 1/4 tsp Cloves
  • 1/2 tsp Cinnamon
  • 1 tsp Vanilla Extract

Method

  1. Mix butter and sugars together in a bowl using a whisk or electric mixer until combined.
  2. Add ground almonds, ground ginger, crystallised ginger, nutmeg, cloves, cinnamon and vanilla extract, mix together until combined.
  3. Roll the dough on a lightly floured surface to a thickness of approximately 0.5 cm.
  4. Cut the rolled dough into circles and place on a baking tray lined with baking parchment.
  5. Bake for 10-15 minutes at 180°c/ Gas Mark 4.
  6. Allow the cookies to cool for a few minutes before removing from the tray.
  7. Serve warm and enjoy!
