Recipe: Cow Heel Soup

Ingredients:

• 2 lbs of beef feet
• 2 tablespoons of bone marrow
• 4 potatoes, peeled and diced
• 2 onions, minced
• 2 cloves of garlic, minced
• 2 stalks of celery, chopped
• 1 carrot, peeled and diced
• 4 cups of chicken stock
• 2 tablespoons of olive oil
• Salt and pepper to taste
• Sour cream, for serving
• Fresh herbs, for serving

Method:

1. Clean the beef feet thoroughly and place in a large pot. Cover with cold water and bring to a boil. Simmer for two hours.
2. Add potatoes, onions, celery, garlic and carrot to the pot, and continue to simmer for an hour.
3. Remove the beef feet and pick out the bone marrow. Return the marrow to the pot and stir.
4. Use an immersion blender to blend the soup until it is smooth.
