Thai-Style Shaved Beef Coconut Curry

  • 2 tbsp vegetable oil
  • 1 pound beef tenderloin, thinly sliced
  • 2 garlic cloves, minced
  • 2 tsp red curry paste
  • 1/4 cup fish sauce
  • 1/4 cup light brown sugar
  • 1 can (13.5 oz) light coconut milk
  • 2 red bell peppers, seeds and ribs removed, thinly sliced
  • 1/4 cup chopped fresh basil leaves


  1. Heat oil in a large saucepan over medium heat. Add beef and garlic and cook, stirring often, until beef is browned, 3 to 5 minutes.
  2. Add curry paste, fish sauce and sugar and stir to combine. Cook for 1 minute.
  3. Add coconut milk and bring to a simmer. Add bell peppers and simmmer for about 10 minutes.
  4. Add the basil and cook for an additional 2 minutes. Serve over rice and enjoy.
