Spanish Gambas Al Ajillo Recipe

Spanish Gambas Al Ajillo, or Garlic Shrimp, are a classic Spanish tapas dish that is loved worldwide. Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 6 – 8 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of smoked paprika
  • Pinch of dried chili flakes
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • 2 tablespoons of butter or a neutral oil or ghee (optional)
  • Juice of 1/2 a lemon

Instructions

  1. Heat the oil in a large non-stick skillet over medium-high heat.
  2. Add the garlic and cook until just beginning to turn golden, 1-2 minutes. Reduce the heat to low.
  3. Add the paprika and chili flakes and cook for 30 seconds.
  4. Add the shrimp and stir to coat with the spices. Cook until the shrimp are just cooked through, 3-4 minutes.
  5. Season with salt and pepper.
  6. Stir in the butter or oil and parsley. Cook 1 minute longer.
  7. Squeeze the lemon juice over and stir to combine.
  8. Serve shrimp and butter/oil mixture with crusty bread.
