Ingredients
- 6 Pork sausages
- 300g Penne or rigatoni
- 1 tbsp Olive oil
- 1 Onion, finely chopped
- 2 cloves Garlic, finely chopped
- 400g tin Chopped tomatoes
- 1 tsp Dried oregano
- to serve, optional Parmesan
- Salt and black pepper
You’ll need: Large saucepan, Large frying pan
Method
Squeeze the sausage meat out of the skins into a large frying pan with the oil over medium-high heat. Cook for 8–10 minutes, breaking it up, until browned and cooked through with no pink inside.
Add the onion and cook for 5 minutes until soft, adding the garlic for the last minute.
Stir in the tomatoes, oregano and 100ml water. Simmer for 10 minutes. Season to taste.
Meanwhile, cook the pasta in salted boiling water according to the packet instructions. Drain, toss through the sauce and serve with parmesan.
Storage
Fridge up to 2 days, or freeze up to 3 months. Reheat until piping hot all the way through.
