- 6 Pork sausages
- 300g Penne or rigatoni
- 1 tbsp Olive oil
- 2 cloves Garlic, finely chopped
- ½ tsp Chilli flakes, optional
- 200ml Cream
- 100g Baby spinach
- 40g Parmesan, grated
- Salt and black pepper
You’ll need: Large saucepan, Large frying pan
Method
Cook the pasta in salted boiling water according to the packet instructions. Scoop out ½ cup of the pasta water, then drain.
Meanwhile, squeeze the sausage meat out of the skins into a large frying pan with the oil over medium-high heat. Cook for 8–10 minutes, breaking it up, until browned and cooked through with no pink inside.
Add the garlic and chilli flakes for 1 minute, then pour in the cream and simmer for 3 minutes. Stir in the spinach until wilted.
Toss the pasta through the sauce with the parmesan, loosening with a splash of pasta water. Season to taste.
Storage
Fridge up to 2 days. Reheat with a splash of water until piping hot all the way through. Not suitable for freezing.
