Ingredients
- 250g Penne
- 30g Butter
- 1 Onion, finely chopped
- 2 tbsp Plain flour
- 2 cups (500ml) Milk
- 120g Cheddar, grated
- 1 tsp Dijon mustard
- 2 x 185g tins Tuna in oil or water, drained
- 1 cup Frozen peas
- 1/3 cup Dried breadcrumbs
- Salt and black pepper
You’ll need: Large saucepan, 2 litre baking dish
Method
Heat the oven to 200°C (180°C fan). Cook the penne in salted boiling water for 2 minutes less than the packet time. Drain.
Meanwhile, melt the butter in a large saucepan over medium heat. Cook the onion for 3 minutes. Stir in the flour for 1 minute, then add the milk a little at a time, stirring, and simmer for 3–4 minutes until thickened.
Take the pan off the heat and stir in two thirds of the cheese and the mustard. Season, then fold in the pasta, tuna and peas.
Tip into a 2 litre baking dish. Mix the remaining cheese with the breadcrumbs and scatter over the top.
Bake for 20 minutes, until golden and bubbling and piping hot in the centre. Rest for 5 minutes before serving.
Storage
Fridge up to 2 days in a sealed container. Reheat until piping hot all the way through.
