Pork Chop & Potato Tray Bake

  • 700g Potatoes, cut into 3cm chunks
  • 2 Red onions, cut into wedges
  • 4 (about 200g each) Pork loin chops, about 2cm thick
  • 250g Green beans, trimmed
  • 3 tbsp Olive oil
  • 3 cloves Garlic, crushed
  • 1 tsp Dried rosemary
  • 1 tsp Smoked paprika
  • Salt and black pepper

You’ll need: Large baking tray

Method

  1. Heat the oven to 220°C (200°C fan). Toss the potatoes and onions on a large tray with 1 tbsp oil, salt and pepper. Roast for 20 minutes.

  2. Mix 1 tbsp oil with the garlic, rosemary, paprika and a good pinch of salt and pepper. Rub it over the chops.

  3. Push the vegetables aside, add the chops and roast for 12 minutes, then turn the chops.

  4. Toss the beans with the remaining oil and add them to the tray. Roast for 10–12 minutes more, until the potatoes are crisp and the pork is cooked through (63°C on a thermometer; juices clear).

  5. Rest the chops for 3 minutes before serving.

Storage

Fridge up to 2 days in a sealed container. Reheat until piping hot all the way through.
