Chicken Fajita Tray Bake

- 600g Chicken breast, sliced into 1.5cm strips
- 3 Capsicums, red, yellow or green, thinly sliced
- 2 Red onions, thinly sliced
- 2 tbsp Olive oil
- 2 tbsp Fajita seasoning
- 1 Lime, juiced
- 8 Small flour tortillas
- 150g Sour cream
- 120g Tomato salsa
- 1/2 tsp Salt
You’ll need: 2 large baking trays
Method
Heat the oven to 220°C (200°C fan). Toss the chicken, capsicums and onions with the oil, fajita seasoning and salt, then spread over two large trays in a single layer so they roast rather than steam.
Roast for 20–22 minutes, swapping the trays and stirring halfway, until the vegetables are soft and charred at the edges and the chicken is cooked through, white all the way with no pink.
Wrap the tortillas in foil and warm them in the oven for the last 5 minutes.
Squeeze the lime over the tray and toss. Serve with the tortillas, sour cream and salsa.
Storage
Keep leftover filling in the fridge up to 2 days, separate from the tortillas. Reheat until piping hot all the way through.
