Ingredients
- 300g Spaghetti, broken in half
- 250g Cherry tomatoes, halved
- 1 Onion, thinly sliced
- 3 cloves Garlic, sliced
- 2 tbsp Olive oil
- 1 tbsp Tomato purée
- 750ml Water
- small handful Basil or parsley, chopped
- to serve, optional Parmesan
- Salt and black pepper
You’ll need: Large deep pan
Method
Put everything except the basil and parmesan in a large deep pan with a good pinch of salt.
Bring to the boil, then cook over medium-high heat for 10–12 minutes, stirring often to stop the pasta sticking, until the pasta is tender and the water has mostly turned into a sauce.
Season to taste, stir in the basil and serve with parmesan.
Storage
Fridge up to 2 days. Reheat with a splash of water until piping hot.
