Easy Zucchini Slice
A classic Australian slice of grated zucchini, cheddar and onion set in an egg and flour batter.

Ingredients
- 3 medium (400g) Zucchini, coarsely grated
- 1 Onion, finely chopped
- 1 cup (120g) Grated cheddar
- 1 cup (150g) Self-raising flour
- 5 Eggs
- 1/3 cup (80ml) Vegetable oil
- to taste Salt and pepper
You’ll need: 20cm x 30cm slice tin, Baking paper, Clean tea towel
Method
Preheat the oven to 170°C fan-forced. Grease and line a 20cm x 30cm slice tin with baking paper.
Squeeze the grated zucchini in a clean tea towel to remove as much liquid as you can, so the slice is not soggy.
Whisk the eggs and oil in a large bowl. Stir in the flour until just combined, then fold in the zucchini, onion, cheese, salt and pepper.
Pour into the tin and smooth the top. Bake for 35 minutes, until golden and set in the centre (a skewer should come out clean).
Rest in the tin for 10 minutes before cutting into squares. Total time includes the resting. Serve warm or cold.
Storage
Cool, refrigerate within 2 hours and eat within 2 days. Reheat until piping hot, or eat cold.
