Ingredients
- 4 Thick bread slices, sourdough or wholemeal
- 2 x 185g tins Tinned tuna, drained well
- 1/3 cup Mayonnaise
- 2 Spring onions, finely sliced
- 1 tbsp Lemon juice
- 2 medium Tomatoes, sliced
- 120g Cheddar, grated
- Black pepper
You’ll need: Grill, Baking tray
Method
Heat the grill to high. Toast the bread on one side under the grill, then turn it over.
Mix the tuna, mayonnaise, spring onions, lemon juice and pepper in a bowl.
Spread the tuna mix over the untoasted side of the bread, then top with the tomato slices and cheddar.
Grill for 3–4 minutes until the cheese is melted and bubbling. Watch closely so it does not burn.
Storage
Best eaten straight away. Keep any leftover tuna mix covered in the fridge up to 1 day.
