Ingredients
- 500g Sirloin or rump steak, about 2cm thick
- 2 Brown onions, thinly sliced
- 2 tbsp Olive oil
- 2 tbsp Wholegrain mustard
- 4 Crusty bread rolls, split
- 40g Rocket
- Salt and black pepper
You’ll need: Large frying pan, Chopping board
Method
Take the steak out of the fridge 10 minutes before cooking. Pat dry and season well with salt and pepper.
Heat 1 tbsp oil in a large frying pan over medium heat. Cook the onions for 8–10 minutes, stirring, until soft and golden. Move to a plate.
Wipe the pan, add the remaining oil and heat over high heat. Cook the steak for 3–4 minutes each side for medium (63°C with a thermometer), or longer for well done.
Rest the steak on a board for 5 minutes, then slice thinly across the grain.
Toast the rolls if you like and spread with mustard. Fill with rocket, onions and steak, and serve.
Storage
Best eaten straight away. Keep leftover steak and onions covered in the fridge and eat within 2 days; reheat until piping hot or serve cold.
