Easy Sausage Curry
Browned sausages simmered in a mild curry sauce with carrot and peas, served over rice.

- 8 Pork sausages
- 1 tbsp Vegetable oil
- 1 Onion, sliced
- 2 Carrots, sliced into 5mm rounds
- 2 cloves Garlic, finely chopped
- 2 tbsp Curry powder
- 1 tbsp Plain flour
- 1 tbsp Tomato paste
- 500ml Chicken stock
- 1 cup Frozen peas
- 4 cups Cooked rice, from about 1½ cups raw
- Salt
You’ll need: Large deep frying pan, Saucepan
Method
Heat the oil in a large deep frying pan over medium-high heat. Brown the sausages for 6–8 minutes, turning, then remove and cut each into 3 pieces. They finish cooking in the sauce.
Cook the onion and carrot in the same pan for 5 minutes. Add the garlic, curry powder, flour and tomato paste and stir for 1 minute.
Gradually stir in the stock, return the sausages and simmer for 15 minutes until the carrot is tender, the sauce is thick and the sausages are cooked through with no pink inside. Stir in the peas for the last 3 minutes and season with salt.
Meanwhile, cook the rice to the packet instructions. Serve the curry over the rice.
Storage
Keep leftover curry in the fridge up to 2 days. Cooked rice must be cooled quickly and refrigerated within 1 hour. Keeps up to 1 day. Reheat once, until piping hot all the way through.
